I found a beautiful new bundt pan last week while helping my dad clean out a bedroom in my parents home,  when we saw the bundt pan my dad said it was meant to be a present from my most recent birthday, but when it came time to wrap they could not find the pan.  My sister had requested pear bars for our family dinner, but I was dying to use my new pan, so along with the pear bars I created this cinnamon pear bundt cake. 



1 cup butter

1 1/2 cups sugar

4 large eggs

1 1/2 tsp vanilla

3 1/2 cups flour

2 tsp baking powder

1/2 tsp baking soda

1 cup buttermilk

2 tsp cinnamon

1 can of pears thinly sliced 


Cream Fheese filling

8 0z cream cheese

1/4 cup butter

1/2 cup sugar

1 egg

2 tbs flour

1 tsp vanilla extract


Pear Caramel

1 cup heavy syrup from a can of pears

2 tbs butter

pre heat oven to 350

butter and flour bundt pan.

cream cheese filling:

cream softened cream cheese and butter together until smooth. add sugar, egg flour and vanilla until smooth.  set aside for later. 


cream butter and sugar until fluffy, add in eggs and vanilla.  combine dry ingredients. add 1 cup of dry ingredients and mix until incorporated then add 1/4 cup of buttermilk, alternate mixing until everything is fully incorporated.  

line the bottom of pan with sliced pears, pour half of the batter on top of pears.  spoon cream cheese mixture over pears, keeping the mixture away from the edges of the pan. cover with the rest of the cake batter. 

bake for 60-75 minutes or until a knife comes out clean.  let cake cool in pan for ten minutes, flip out of pan.  cover with pear caramel.  serve warm or cooled. 

pear caramel: 

boil syrup until reduced by half, add butter and simmer for 3 minutes.  set aside.
