Strawberry, chocolate, vanilla. Neapolitan tends to get a bad rep,  I overheard a conversation the other day about how it is such a waste of a flavor just choose one of the flavors instead of combining them all together. for some reason this conversation inspired me to make a delicious cake using the three classic flavors.  I added a little twist to each layer to add something new to this classic.

Ingredients

Chocolate Layer 

  • 1 package triple chocolate fudge cake mix 
  • 1 1/4 cups milk
  • 4 eggs
  • 3/4 cup melted butter
  • 1/2 cup chocolate pudding mix

Strawberry Layer

  • 1 package Strawberry cake mix 
  • 1 1/4 cups milk
  • 4 eggs
  • 3/4 cup melted butter
  • 1/4 cup  white chocolate pudding mix
  • 1/4 tsp raspberry Jam
  • dash of cinnamon

Vanilla Layer

  • 1 package Vanilla cake mix 
  • 1 cup milk
  • 1/2 cup sour cream
  • 4 eggs
  • 3/4 cup melted butter
  • 1/4 cup white chocolate pudding mix
  • 2 oz  shredded white chocolate

Dark Chocolate Ganache

  • 12 oz dark chocolate chocolate
  • 8 oz cream

White Chocolate Ganache

  • 10 oz white chocolate
  • 4 oz cream

White Chocolate Frosting

  • 1 cup butter
  • 4 0z cream cheese
  • 3 cup powdered sugar
  • 1 tbs cream
  • dash of salt
  • 1/2 cup white chocolate ganache
  • 2 tsp vanilla

preheat oven to 350

for each cake layer: combine all cake ingredients and whip for two minutes. for the vanilla layer fold in white chocolate after whipping pour into two greased 8″ baking rounds. bake for 30 minutes or until toothpick comes out dry. cool for 10 minutes and flip out of pans onto cooling racks. cool completely.

Dark Chocolate Ganache

heat cream and pour over dark chocolate.  stir until combined

White Chocolate Ganache

pour heated cream over white chocolate and stir until combined.

for the frosting

cream butter and cream cheese until fully blended.  add powdered sugar, salt and vanilla for one minute.  Add white chocolate ganache and cream whip for two minutes.

Assemble:

put one chocolate round on a turntable, make a rim around the cake with white chocolate frosting, fill with dark chocolate ganache. place a round of strawberry cake on top, rim with frosting, fill with white chocolate ganache.  place a vanilla layer on top  frost with white chocolate frosting.
